Tomato-Mozzarella Salad

Here is a recipe you will find in almost all of the eateries in Italy. It is usually served as an appetizer, but it makes a fine salad or meat accompaniment..

1 pound fresh mozzarella
   or 1 pound whole milk regular mozzarella
                                                             

1 pound Roma or cherry tomatoes                                                              

5 tablespoons.chopped. Italian parsley                                                              

6 tablespoons.extra-virgin or regular olive oil                                                              

2 tablespoons.Balsamic vinegar                                                              

Salt & freshly ground black pepper
                                                             

Cut the mozzarella into " squares or " slices, depending upon the type of mozzarella used.   Cut cherry tomatoes in half.  Cut Romas into small pieces.

Put cheese and tomatoes in an oblong serving dish. Mix oil, vinegar, salt and pepper together. Sprinkle over tomatoes and cheese, sprinkle with parsley.

Serves about 6 for an appetizer.
